The method that keeps your bread fresh the longest would be air tight bag, plastic or brown bag in the fridge. However a good air tight bag on the counter will last long as well.

What if bread becomes hard after a week but there’s no present mold?

HOW TO STORE YOUR BREAD

The great thing about sourdough is that even if it gets hard all you have to do is lightly pour water over it, put it in a dutch or enclosed oven pan in the oven at 350 for a few minutes. the steam will soften the bread all over again. Please note this is if ONLY it’s within a week of purchasing the bread and its been out on the counter. For refrigerated, 1.5 weeks!
